Inputs for a loaf batch
Record ingredients consumed in dough and starter maintenance attributable to production, sellable loaves, hands-on hours, labor rate, oven-round costs, packaging per loaf and ongoing overhead. Specify whether oven energy is charged directly here or included in overhead; use one method for the same expense.
Starter is not a free ingredient
If your recipe uses 600 grams of starter, cost its flour and other purchased inputs through a consistent sub-recipe method. Count feeding inputs and attributable discard once. Do not charge starter flour both in the main dough's flour row and again in the starter sub-recipe.
Formula and original example
Batch cost = dough and starter ingredients + active labor + direct oven cost + packaging + allocated overhead
Loaf price with markup = batch cost × (1 + markup) ÷ sellable loaves
| Batch component | Calculation | Cost |
|---|---|---|
| Ingredients including attributable starter | Measured batch ledger | $8.40 |
| Active labor | 1.5 hours × $24 | $36.00 |
| Direct oven allowance | Two rounds, total | $4.00 |
| Bags | Six × $0.50 | $3.00 |
| Overhead excluding that oven allowance | Batch allocation | $8.60 |
| Total | Sum | $60.00 |
For six sellable loaves, cost is $10 each. At 25% markup, the planning price is $12.50 per loaf. These figures are invented. If one loaf is unsellable and the same $60 batch cost must be recovered from five loaves, the corresponding price is $15.00 each under the same markup.
Batch scheduling checks
Record fermentation and cooling windows separately from active handling. Count mixing, folds, shaping, loading, unloading and cleanup as the work actually performed. If several batches share oven or cleanup work, document the allocation and reconcile the total.
If your order requires more loaves than a batch yields, round required batches upward. Do not assume extra loaves have buyers. A prepaid order and a speculative market batch have different demand assumptions.
Validation and limitations
Require positive whole sellable yield, nonnegative costs and hours, and consistent weight units for recipes. Flag missing starter costing, duplicate energy charges and yield based on dough pieces rather than finished sellable bread.
The model does not test fermentation, establish shelf life, determine permitted home-bakery foods or guarantee sales. Use your tested recipe and actual operation.
Baker Quote — $29 one-time supports a broader recipe-to-quote workflow. Supply the measured starter, yield, labor and packaging inputs rather than substituting a cake estimate with the word “bread.”
